If you are writing or editing for different markets it’s a good idea to keep an eye on convention.
There are some well-known spelling differences between British English and American English, and many of these differences came about because British English tended to keep the spelling of words it absorbed from other languages. American English typically adapted the spelling to reflect the way that the words sound phonetically.
